Actually that is a good strategy. Flip it with something like crookclaw transmuter and it is very vulnerable.

We need to have a bigger crab, say a 2/9, that flips over to be a 9/2 trampler. It will be giant, and hitting its weak spot will sure do massive damage.

Yippieee! Come One, guys! Would be boring if there were only zombies, vampires and werewolves. Can't stand this yak about tribal effectiveness. Crabs make a great job being defensive blue vanilla creatures 'cause being typical well armored water creatures. and fortress crab is an accurate name for this giant unbreakable crab. with this guy you can stop many huge attackers for 4 mana (for this purpose being more effective than armored cancrix. great job, wizard (no irony) !!

I intentionally drafted every Giant Enemy Crab that passed me. I went undefeated.
On the face of it, this is a pretty uninspiring crab, but I played them in the prerelease/launch event, and I actually found that they were a source of frustration for my opponents. 6 toughness is enough to make killing it in combat fairly tough, and in a few games it protected me on the ground until I could launch an air force and fly through for the win.
In limited? I think it's honestly not terrible. It is unlikely to win you a game by itself, but it can buy you time to get to your good stuff, if your pool is not so hot.

It's quite a decent blocker, making your opponent have to make the tough choice between wasting their removals on a 1-powered creature just to attack or having to be worn down after time.

Not too bad in limited; of course, Fortress Crab may not be a strong card, but it's a funnier choice than any mainstream and over-used vanilla of the past (except the mighty God-card Storm Crow).
I wish planes were populated by more weird and unknown creatures, and not just a "more of the same" (goblins, elves, merfolk etc.). Wizard should risk and try to create new races and freaks, instead than just relying on the "same-safe" types. That's why I loved vedalken in the past and werewolfes (finally as a "playable" race) now in Innistrad.
