It's MUCH better you say? Really? Because your really gonna need this effect at instant speed. (Name one conceivable instance that you would.)

if it was instant you could play it during your opponents turn leaving 2 mana open for your first(non-extra turn) allowing a play of a creature without haste to finish the game

if you play final fortune at end of opponent's turn, you end up having two turns coming up, though you lose at the end of the first one. So in reality this is better since you can fetch it with Burning Wish.

it is reasone for Final Fortune to be beter (unless you use cards that like sorceries but not instants), in multiplayer you can cast Final Fortune inbetween two other players turns.

While 99.9% of the time, being an instant instead of a sorcery is much better, in this case it is not. Why the heck would you want to cast this on the opponent's turn? Instead of getting 2 turns in a row, you would just get 1 and then auto-lose. If you didn't cast it, you would get the 1 normal turn you always get and NOT auto-lose, which is clearly better. If casting it on your opponent's turn = worse than not casting it at all, you shouldn't cast it. Which means being an instant is not any better than a sorcery.

Ofc, if you meant isochron then sundial, then it being an instant and not a sorcery is critically important.
