Is that a typo on the flavor text? Shouldn't it read 'not' in their best interests?

No, Donovan. It's saying that Changelings are constantly drawn to new shapes, even though it can end badly. The way you propose to phrase it means that there would be no drawback, which wouldn't go with what the art is depicting.

Looks like it would only be worthwhile in an Elf deck when facing a Sliver deck.

Its a grammar thing, that is a tricky sentence there but what is confusing you is the "cannot" in the first line. So if you put a "not" in the end it would make a double negative. It is simpler if you read it as "Changelings cannot resist the draw of a new shape, even if doing so would be in their best interests.

Geez, I'm a hybrid rules guru/grammar Nazi .

Not sure why but this card immediately appeals to me. I think the art mostly... she's all blue and translucent and stuff... But also because its a Grizzly Bears with changeling tacked on, and I love my bears ^_^

I'm wondering if I should put this into my sappro deck. It is a saproling, so highly sacrificable. But it is also a fungus so sporesowerthallid /sporoloth ancient lets it create stuff.

It might leach off of your opponents, but that is becoming increasingly less likely now that modern lords only give their bonus to its controllers creatures.
If you have a tribal deck, this will probably be worse than the card it replaces in every popular tribe.
It is probably only worth it if you find a way to capitalize on its many creature types in your own deck.
wickedragon got close, with this saproling/fungus usage, but I can't imagine having room for it over proper fungus like:
Thallid, Vitaspore Thallid, Spore Flower, Thallid Shell-Dweller, Tukatongue Thallid and Utopia Mycon.

Donovant and like-comments; the thing that's in their best interest is resisting the urge to change, not changing itself, that's why their is no 'not'. If it wasn't clear before, ehh, woo.

Unfortunately, I thought I was going to be better by commenting that this is my favorite Grizzly Bears. A little late. I think a lot of the changelings can sort-of be useful, but the best use I can find for this would be to use it with Scion of Ur-Dragon incase you need to kill him off, quick(they gain control until end of turn or some such things).

No what was confusing him (and me for the first few times I read it) is that the card doesn't clarify what verb the 'doing so' applys to. It could either be talking the resisting changing shape, or it could be talking about the actual changing of shape, which doesn't make sense. The way it is worded could apply to either.
